Instructions
Break the acai
Break frozen acai packs into chunks. Run the sealed pack under warm water 5 sec to loosen if needed.
Blend thick
Add acai, frozen mango, frozen banana, oat milk, and maple syrup to a high-powered blender. Blend on high using a tamper. Blend until smooth and thick — like soft-serve. Add oat milk 1 tbsp at a time only if needed. Do NOT thin too much.
Divide
Divide into 4 wide bowls immediately.
Top & serve
Arrange toppings decoratively: granola, mango, toasted coconut, chia seeds, honey drizzle. Serve immediately.
Chef's Cool Facts
Where Acai Comes From
Acai (ah-sah-EE) berries grow only on acai palms in the Amazon floodplains of Brazil. They must be processed within 24 hours of harvest — which is why they are always sold frozen.
Anthocyanin Powerhouse
Acai contains anthocyanins at concentrations roughly 4× higher than blueberries by weight — one of the highest of any known fruit.
The Secret Ingredient
Frozen banana is the structural secret: its natural pectin and starch create a creamy, gelato-like texture that holds up under toppings without any dairy or thickener.
